Freeze drying is the prosses of removing the moisture content of a food allowing its shelf life to grow exponentially longer.
It also removes the blacklist of most off-limits candy to people wearing braces turning soft sticky candy, crunchy and melt in your mouth dissolvable.
This is a batch of salt water taffy in the freeze dryer before being bagged up to be sent to a customer.
